Pasta with Broccoli Pesto
Ingredients Needed:
10-11 cups Water
1# Broccoli Flowerets
2-3 Cloves of Garlic
1/2 cup Grated Parmesan
3 tbsp Olive Oil
1/2 tsp Salt
12 oz Pasta (Bow Tie or Rotini is best)
1 Small Tomato (diced)
You can either cook broccoli - In a 5 qt pan bring approx 8 cups water to a boil. Stir in broccoli and cook until tender. OR you can steam your broccoli.
Immediately drain and immerse in ice water until cool and drain again
In a food processor or blender (I use my magic bullet), combine 2/3 of the broccoli with the garlic, cheese, oil, salt, & 3 tbsp water. Whip until smooth and set aside.
In a 5 qt pan bring 3 qt water to a boil. Stir in pasta and cook till tender. Drain pasta and add to a serving bowl.
Add Pesto, remaining broccoli, and diced tomatoes. Stir and serve. Garnish with additional shredded parm if you like.
Makes 4 servings in about 30 min.
